Guys! I NEED to tell you about these quinoa cups! I’m obsessed! 🤩
They started out as a trial meal for Leo (since they’re jam packed with veggies and goodness) but he wasn’t really into the quinoa. So like every Mom does, I ate the scraps off his plate, and realized how bomb they were - so I ate them all and had to make more 😝
The best part is you can literally put anything in them! These ones are filled with shredded carrots, sautéed onions and broccoli (dont sauté if you like it crunchy), peas and black beans.
💥RECIPE💥
- 1 cup cooked quinoa
- 1 large egg (2 if they’re smaller)
- 1/2 cup shredded cheese (I added some parm too)
- 1.5 cups of whatever veggies you’ve got!! EX: peas, carrots, broc, peppers, mushrooms, beans, corn, spinach, zucchini etc… Diced or shredded
- Mix all together, and scoop 1/4C of the mixture into a greased muffin tray. Press down on each one with the back of the measuring cup.
- bake for 20 mins at 375 or until edges are brown
SO GOOD! And so easy! Perfect for an on the go snack for you or meal for the kids!
