Ingredients:
1 medium sweet potato, cubed
½ cup black beans, rinsed and drained
100g grilled chicken breast, sliced
1 tbsp olive oil
1 tsp paprika
½ tsp chili flakes (optional)
Juice of ½ lime
1 tbsp Greek yogurt
1 tsp honey
Salt and pepper to taste
Fresh cilantro for garnish
Directions:
Prep the Base: Preheat your oven to 400°F (200°C). Toss your sweet potato cubes with olive oil, paprika, salt, and pepper. Roast for 20–25 minutes until golden and crisp on the edges.
Add the Protein: While roasting, grill or pan-sear your chicken breast with a touch of olive oil and seasoning until cooked through and juicy. Slice thin.
Assemble: In a bowl, layer your roasted sweet potatoes, black beans, and grilled chicken.
Make the Sauce: Mix Greek yogurt, honey, lime juice, and chili flakes to create a creamy chili-lime dressing.
Finish Strong: Drizzle the sauce over your bowl, garnish with cilantro, and get ready to refuel like an athlete.
