Fresh and Light Cake Recipe
A simple, airy, and refreshing cake perfect for any occasion.

Ingredients
For the cake:

2 cups (250g) of all-purpose flour
1 1/2 teaspoons of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
3/4 cup (150g) of granulated sugar
1/2 cup (120ml) of vegetable oil or melted butter
2 large eggs, at room temperature
1 teaspoon of vanilla extract
1/2 cup (120ml) of milk
1/4 cup (60ml) of fresh orange or lemon juice
For the frosting (optional):

1 cup (240ml) of heavy whipping cream
3 tablespoons of powdered sugar
1 teaspoon of vanilla extract
Fresh fruits (like berries, mango slices, or kiwi) for decoration
Instructions
Preheat the oven:
Preheat your oven to 350°F (175°C). Grease and flour an 8-inch (20 cm) round cake pan, or line it with parchment paper.

Mix the dry ingredients:
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Prepare the wet ingredients:
In a large bowl, whisk the sugar and oil (or butter) until combined. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract, milk, and fresh juice.

Combine and mix:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix to keep the cake light and fluffy.

Bake:
Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

For the Royal Icing:

3 cups (360 g) powdered sugar
2 egg whites or 4 tablespoons aquafaba (vegan substitute)
1 teaspoon lemon juice
Gel food coloring (optional)
Instructions

Preparing the Dough:

In a bowl, combine the flour, baking powder, and salt. Set aside.
Using a mixer, beat the butter and sugar until light and fluffy.
Add the egg, vanilla, and almond extract, and mix well.
Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.

2 cups (240g) of cornmeal
1 cup (120g) of all-purpose flour
1 cup (240ml) of milk
1/2 cup (120ml) of oil
1 tablespoon of baking powder
A pinch of salt
1 cup (100g) of grated Parmesan cheese (or any cheese of your choice)
Instructions:
Preheat the oven to 350°F (180°C) and grease a baking pan with butter and cornmeal.
In a large mixing bowl, whisk the eggs and sugar until light and fluffy.
Add the oil and milk, mixing well.
Gradually incorporate the cornmeal, flour, and salt, stirring until smooth.
Fold in the grated cheese gently.
Finally, add the baking powder and mix softly until fully combined.
Pour the batter into the prepared pan and bake for 40–50 minutes, or until golden and a toothpick inserted in the center comes out clean.
Let it cool slightly, then remove from the pan and serve.
Serving Suggestion: Freshly Brewed Coffee

Instructions:
Prepare the caramel:

In a saucepan, melt 1 cup of sugar over low heat until it turns into a golden caramel.
Pour the caramel into a pudding mold and spread it evenly across the bottom. Set aside.
Prepare the pudding mixture:

For the chimichurri sauce:

1/2 cup chopped parsley
2 garlic cloves, minced
1 teaspoon dried oregano
1/2 cup olive oil
2 tablespoons red wine vinegar
Salt and pepper to taste
For the salad:

Mixed greens (arugula, lettuce, or watercress)
Cherry tomatoes, halved
1 tablespoon olive oil
1 tablespoon lemon juice
Salt to taste
Instructions:

Prepare the picanha:
