Healthy treat incoming 🥥 Laura McDonald is sharing her famous Coconut Rough recipe and honestly it’s the snack we didn’t know we needed.

Ingredients: 1 cup shredded coconut, 1 cup almond meal, 1/4 cup chia seeds, 3-4 tbsp cacao, 1/2 cup melted coconut oil, 1/4 cup rice malt syrup, 1 tsp vanilla extract, 1 pinch sea salt.
Method: Combine all dry ingredients in a bowl and mix well. Stir in your coconut oil, rice malt syrup and vanilla until everything comes together. Press evenly into a lined 20x20cm tray and pop in the freezer for 10 minutes. Remove, rest for 5 minutes then slice into pieces. Keep refrigerated in an airtight container.
Pro tip: Taste the mixture before it sets and adjust the sweetness or cacao to your liking. Trust your gut on this one 😉
